Ingredients:

  • 9 lbs Munich Malt
  • 4 lbs Dark Munich Malt
  • 2 lbs Pilsner Malt
  • 0.5 lbs Caramunich Malt
  • 0.5 lbs Melanoidin Malt
  • 0.5 lbs Chocolate Malt
  • 1.5 oz Hallertau Mittelfrueh Hops (4.8% AA for bittering)
  • German Bock Lager Yeast (Wyeast 833)

Instructions:

  1. Mash: Heat 5 gallons of water to 152°F (67°C). Add your malts and let it steep for 60 minutes. After 60 minutes, rinse the grains with 2 gallons of water at 170°F (77°C) to extract any remaining sugars. This process is known as mashing and sparging.
  2. Boil: Bring the mixture (now called wort) to a boil, then add your Hallertau Mittelfrueh hops. Boil for 60 minutes.
  3. Cool and Ferment: After boiling, cool the wort as quickly as possible to about 50°F (10°C). Once cooled, transfer the wort into a sanitized fermenter and add (pitch) your yeast. Ferment at 50°F (10°C) for two weeks or until fermentation is complete (stable gravity readings a few days apart).
  4. Lagering: After primary fermentation, lower the temperature to 40°F (4.4°C) and lager for 4-6 weeks. Lagering is a cold storage period that helps to clarify the beer and smooth out its flavors.
  5. Bottle or Keg: After lagering, you can bottle or keg your beer. If bottling, add priming sugar to create carbonation. Let it condition for at least two weeks before enjoying your homemade Andechs Doppelbock Dunkel!
