Ingredients
Malts
- 4 kg Pale Malt
- 200g Caramel Malt
Hops
- 50g Cascade (60 min – bittering)
- 50g Simcoe (30 min – flavor)
- 50g Citra (10 min – aroma)
- 50g Cascade (dry hop – optional)
Yeast
- 1 packet American Ale Yeast (US-05)
Water Additives
- ½ tsp Gypsum
Brewing Process
Mash
- Heat 27 L of water to 66°C and mash grains for 60 minutes.
- Sparge with 9.7 L of water at 77°C.
Boil
- Boil wort for 60 minutes.
- Add 50g Cascade at 60 minutes, 50g Simcoe at 30 minutes, and 50g Citra at 10 minutes.
Fermentation
- Cool wort to 18-20°C, pitch yeast, and ferment for 14 days.
- Optionally, dry hop with 50g Cascade after 7 days.
Bottling
- Carbonate using 150g corn sugar.
- Condition for 2-3 weeks at 20°C.
